Chorizo Stew with Potatoes and White Beans
A hearty stew with smoked chorizo, creamy white beans and potatoes cooked with paprika, aromatics and herbs.

- 250 g smoked chorizo sausage cut into 2cm thick slices
- 4 medium potatoes cut in cubes
- 1 onion sliced
- 5 garlic cloves sliced
- 1 can of white beans drained
- 2 tsp smoked paprika
- 1 tsp salt
- 2 tbsp olive oil
- Chopped parsley for garnish optional
- 2 cups water
Heat the olive oil to medium-low and fry garlic and onions for 10-15 minutes until the onions caramelize.
Turn the heat up to full medium. Add the chorizo and saute for a couple of minutes.
Tuck in the potatoes. Season with salt and paprika and gently stir to coat with the oils and seasonings.
Pour in two cups of water, bring to boil and simmer on low heat for 10-15 minutes until the potatoes are almost done.
Add the white beans and simmer for another couple of minutes until the potatoes are completely cooked.
Serve as is or with crusty bread and garnished with fresh chopped parsley.
