Easy Apple Strudel with Warm Spices and Vanilla Ice Cream
This easy apple strudel is a delightful blend of soft caramelized apples with comforting flavours of cinnamon, cloves, cardamom and nutmeg.

1 medium saucepan
1 baking tray
- 2 medium sweet apples diced
- 2 medium sour apples diced
- 50 g butter
- 1/3 cups sugar
- 2 tbsp cornstarch
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp ground nutmeg
- 1/2 tsp ground green cardamom
- A pinch of rock salt
- A sheet of puff pastry
Melt 50g butter in the pan. Add sugar and cornstarch and stir to dissolve.
Add diced apples, ground spices and salt and cook over medium heat until softened and thickened, for about 10-15 minutes.
Remove from the heat and let cool.
Arrange the filling in the middle of your pastry sheet.
Make cuts in the sides of the sheet, approx 1.5cm wide and about half way towards the filling, and wrap the filling ‘braiding’ the strips on top.
Place the pie onto a baking tray lines with baking paper.
Bake in the preheated oven at 180C for 30-35 minutes or until the pastry turns golden and crispy.
Serve warm with a scoop of vanilla ice cream.
- For sweet apples, you can use Fuji, Royal Gala or Jazz. For sour apples, use Granny Smith.
- You can swap cloves for allspice.
