This vibrant, nutritious and tasty salad is a great companion to chicken, duck or fish dinners. Fresh kale has been gently massaged with a light vinaigrette to soften and lose some of its bitterness, making it a perfect base for building up flavours. Nutty avocado, smoky roasted bell peppers, sweet and tart tomatoes create the bulk of the dish, whereas parmesan and walnuts add a finishing touch. The star is however the dressing – a light vinaigrette made with luxurious unrefined walnut oil. Earthy, savory, warm, it creates a whole new dimension and instantly elevates the flavours!
