During the cooler months, I love enhancing my dishes with warm, woody, earthy flavours of wild mushrooms. There is so much coziness and comfort in that warmth! I always have a few jars of dried mushrooms in my pantry. I soak them in water which takes in all the beautiful flavours of the forest, and use it for soups, sauces and stews. A lot of things to try here! For instance, Chicken in Creamy Mushroom Sauce, Wild Mushroom and Cauliflower Soup, Butternut Squash and Porcini Pappardelle are all fabulous dishes. But one of the most spectacular combos is delicate seared scallops over creamy potato mash with a generous pouring of wild mushroom sauce. Try A Flavour Affair’s favourite and thank me later!
