If it was up to me, all I’d eat in summer would be light salads and refreshing soups. But with two always hungry teens in the house, that’s just not possible 😀 What’s more, they’d choose heavier red meats and poultry over seafood on any day. To keep it as light as possible, I turn to sides, salsas and sauces packed with zesty, uplifting flavours. Invigorating aromas of mint or green cardamom, tangy freshness of pomegranate or lime, cooling vibes of cilantro or dill all help lighten the plate up. One of my favourite summer meals are spice-coated chicken shawarmas wrapped into thin tortillas along with juicy tomatoes, crisp cucumbers, crunchy onions and salad leaves.
