Inspired by Spanish cuisine, this simple and satisfying chorizo stew is one of my go-to recipes for a quiet, cozy dinner. Juicy chunks of smoked and slightly charred sausage, creamy beans and fluffy potatoes create a delicious combo and a homey feel. It is super easy to make and, as any soul food, is extremely rewarding. Enjoy as is or go all in and serve with crusty bread to pick up every last bit of the sauce.

The Flavour Affair:

Chorizo + Smoked Paprika + Potatoes + Beans + Garlic

Smokiness of chorizo and paprika together with soothing thickness of beans and potatoes… m-mmmm! This stew is, undoubtedly, the ultimate comfort food.

Chorizo: if you are not opposed to a little kick, go for spicy smoked chorizo. Otherwise, use a mild version.

Smoked paprika: its primary goal is to accentuate the smoky flavours of the stew. You can then experiment with the level of heat and go for hot or sweet paprika + mild or spicy chorizo.

Potatoes: if you prefer your stew potatoes firm, go for the types that are intended for boiling. If you want a thicker texture (yes please!), opt for fluffier baking type potatoes. They will also cook faster.

White beans: the purpose of beans in this recipe is to create a creamy texture and add a little more substance. You can use large canned beans.

Garlic: essential to Spanish cuisine, garlic adds a pungent flavour and a distinctive aroma.

Optional ingredients include onions and parsley. I always enjoy adding fresh herbs to stews to balance the heaviness and create a more rounded flavour profile. Herbaceous, peppery parsley works particular well with smoked chorizo and paprika.

Preparartion tips for chorizo stew:

This dish is really straightforward and as easy to prepare as it gets. The only thing you need to watch out for is not to burn the garlic and onions. Cook them on low-medium heat first to caramelize the onions and only turn it up to medium when adding the chorizo. All you will need to do afterwards is to keep checking your potatoes for readiness. When they are almost cooked, add the beans, simmer for the last 5 minutes and you are done!

Chorizo Stew with Potatoes and White Beans

A hearty stew with smoked chorizo, creamy white beans and potatoes cooked with paprika, aromatics and herbs.

Equipment

  • 1 large non-stick pot or casserole

Ingredients
  

  • 250 g smoked chorizo sausage cut into 2cm thick slices
  • 4 medium potatoes cut in cubes
  • 1 onion sliced
  • 5 garlic cloves sliced
  • 1 can of white beans drained
  • 2 tsp smoked paprika
  • 1 tsp salt
  • 2 tbsp olive oil
  • Chopped parsley for garnish optional
  • 2 cups water

Instructions
 

  • Heat the olive oil to medium-low and fry garlic and onions for 10-15 minutes until the onions caramelize.
  • Turn the heat up to full medium. Add the chorizo and saute for a couple of minutes.
  • Tuck in the potatoes. Season with salt and paprika and gently stir to coat with the oils and seasonings.
  • Pour in two cups of water, bring to boil and simmer on low heat for 10-15 minutes until the potatoes are almost done.
  • Add the white beans and simmer for another couple of minutes until the potatoes are completely cooked.
  • Serve as is or with crusty bread and garnished with fresh chopped parsley.
